Muffins have grown in popularity over the last few years and you will find recipes for muffins which combine just about every ingredient you can think of. Whether that be the taste, adding fruit and nuts or even the colours if they are being made for kids. Sweet muffins are probably the ones that first spring to mind when anyone thinks of them, but there are also some great savory recipes for muffins that are delicious. Here is a recipe for muffins that combines bacon and cheese to create mouthwatering muffins that can be eaten at any time of day.
2 cups of plain flour;
8 slices of bacon that have been previously cooked and then chopped into smallish pieces;
1 cup of grated cheddar cheese;
2 tbsp’s sugar;
3 tsp’s of baking powder;
– tsp of salt;
– tsp of ground black pepper;
1 cup of milk;
– cup of vegetable oil.
Sieve the flour into a large mixing bowl and then add the bacon, cheese, sugar, baking powder, salt and pepper. Mix everything together well until it is all evenly distributed and put to one side for the moment. In another bowl, mix the egg milk and oil and beat until they have all combined into a smooth mixture.
The next thing to do is to pour the egg, milk and oil mixture into the dry goods a little at a time until everything is moist and the mixture comes together well.
Next you need to grease a muffin tin and make sure that all the edges are well covered or use paper muffin cases, which do not need greasing, and fill them with the mixture approximately a third of the way up the tin or case. Place them into an oven that has been preheated to 400o F for about 15 to 20 minutes or until they are cooked. A great way to check that they are properly cooked is to insert a toothpick into the centre of a muffin. If the toothpick comes out clean then they are ready, if it has some mixture sticking to it then they need a bit longer.
When they are done allow them to cool for about five to ten minutes and serve while they are still warm. This recipe for muffins will make 12 delicious muffins and these can be frozen or placed into an airtight tin. You may well find though that they will disappear much quicker than you first thought and that you will be making another batch soon.
This is just one savory recipe for muffins, but there are a lot more possibilities available. You can adjust the seasonings and add spice or you could use a different cheese or different meats. Another recipe for muffins to try is bacon, blue cheese and broccoli. It may sound a little on the strange side but it is absolutely delicious and you can leave out the bacon if you are making these for vegetarians .
