I’m a big fan of paninis and have tried many variations over the years thanks to Trader Joe’s vast variety of cheeses and fresh-baked bread. These are my three favorite go-to panini recipes using products from your local Trader Joe’s store.

Caramelized Apple, Brie, and Pecan Panini Recipe A delicious panini made with cinnamon bread, caramelized apples, toasted pecans, and brie.

Yield: 4 panini

INGREDIENTS:2 Trader Joe’s Organic Gala Apples, cored and sliced into 1/4 inch wedges8 slices Trader Joe’s Cinnamon Bread4 ounces brie, thinly sliced4 tablespoons Trader Joe’s Raw Pecans, toasted

DIRECTIONS:1. Preheat oven to 400- F.2. Arrange apples in a single layer on a baking pan lined with parchment paper, foil, or sprayed with cooking spray. Bake until apples become golden brown and the bottoms form a caramelized crust, about 15-20 minutes. 3. Arrange pecans in a single layer on a baking pan. Bake until pecans start to turn golden, about 7 to 10 minutes. Shake the pan halfway through baking.4. Preheat a panini grill to medium-high heat.5. To assemble each panini: Layer a slice of cinnamon bread with a slice of brie, roasted apple slices, toasted pecans, and top with a second slice of bread. Grill panini until the cheese is melted and the bread is toasted, about 3 to 4 minutes. Serve immediately.

Tomato, Mozzarella, and Basil Panini Recipe A sweet and creamy panini with heirloom tomatoes, mozzarella, and fresh basil leaves on a French baguette.

Yield: 4 panini

INGREDIENTS:1 Trader Joe’s French baguette, cut into four slices and halved lengthwise8-12 TJ’s Fresh Basil Leaves4 TJ’s Organic Heirloom Tomatoes, sliced into 1/4 inch slices4 slices TJ’s Mozzarella CheeseExtra-virgin olive oilSalt and pepper

DIRECTIONS:1. Preheat panini grill to medium-high heat.2. Drizzle olive oil inside each baguette slice. To assemble panini, layer the bottom half of the baguette with basil leaves, tomatoes, and mozzarella. Season with salt and pepper and add the top half of baguette.3. Grill panini until cheese is melted, about 5 to 6 minutes. Serve immediately.

Bacon, Egg, and French Toast Panini Recipe Indulgently delicious breakfast panini made with french toast, a hint of maple syrup, smoky bacon, and scrambled eggs.

Yield: 4 panini

INGREDIENTS:8 slices Trader Joe’s Sourdough Bread1 dozen eggs2 1/2 tablespoons low-fat milk1 Tablespoon TJ’s Maple Syrup8 slices TJ’s Baconsalt and pepper

DIRECTIONS:1. Cook bacon according to package.2. Preheat panini grill to 375- F. In a medium bowl, whisk together 4 eggs, 1 tablespoon milk, and maple syrup.3. Dip bread slices in the egg mixture and transfer to the panini grill. Grill until egg mixture is fully cooked, about 5 minutes.4. In a large bowl, whisk together the 8 remaining eggs, the remaining 1 1/2 tablespoons milk and salt and pepper to taste.5. Pour egg mixture into a large nonstick pan over medium heat. When the egg mixture begins to solidify, move the mixture around the pan with a spatula to scrape the cooked eggs from the bottom to the top of the mixture and expose the still-wet portions to the heat. Cook until eggs are no longer wet.6. Assemble panini by layering the bacon and eggs between the two french toast slices.

Low-fat Cooking Techniques

You may be used to putting a knob of butter or lard into the frying pan before adding the streak bacon ? this does not mean that you should. Instead of adding the saturated fat, try grilling without any added fat. Instead of streaky, try bacon and trim off any visible fat. You could even get rid of the bacon altogether. INGREDIENTS:-

8 spring onions

1 green pepper

1 red pepper

2 tbsp groundnut or sunflower oil

2 garlic cloves, very finely chopped

1 tbsp grated fresh root ginger

200g/7 oz mange tout

450 g/1 lb raw prawns, thawed if frozen, peeled and divined

4 tbsp Chinese rice wine

STEPS:-

1) Using a sharp knife, trim the spring onions and finely chop. Deseed and slice the peppers.

2) Heat the groundnut oil in a preheated wok or heavy-based frying pan. Add the spring onions, garlic and peppers and stir-fry over a medium heat for 4 minutes

3) Add the mange touts and prawns and stir fry for 4 minutes, or until the prawns have changed the color. Stir in Chinese rice wine, then transfer to four large, warmed serving plates and serve.

VARIATION:-

Substitute thinly sliced broccoli florets for the mange tout for an equally colorful and tasty dish. Replace the Chinese rice wine with dry sherry.

Also, let me share with you one of my personal favorites, The ?Low Fat? Coffee Ice Cream:

Preparation Time: 1 hour, plus

Cook Time: 0 minutes

Freezing: 6 hours

INGREDIENTS:-

25 g/1 oz plain chocolate

225g/8 oz ricotta cheese

5 tbsp low fat natural yogurt

85 g/3 oz caster sugar

175 ml/6 fl oz strong black coffee, cooled and chilled

? tsp ground cinnamon

dash of vanilla essence

25 g/1 oz chocolate curls, to decorate

STEPS:-

1) Grate the chocolate and reserve. Place the ricotta cheese, yogurt and sugar in a blender or food processor and process until a smooth puree forms. Transfer to a large bowl and beat in the coffee, cinnamon, vanilla essence and grated chocolates.

2) Spoon the mixture into a freezer proof container and freeze for 1? hours, or until slushy. Remove from the freezer, turn into a bowl and beat. Return to the container and freeze for 1? hours.

3) Repeat the beating and freezing process twice more before serving in scoops, decorated with chocolate curls. Alternatively, leave in the freezer until 15 minutes before serving, and then transfer to the refrigerator to soften slightly before scooping.
